OCHRATOXIN A – AS UNDESIRABLE SUBSTANCE IN COFFEE DISTRIBUTED IN POLAND

Summary
The aim of this study was the analysis ochratoxin A, as undesirable substance occurring in one of the most consumed stimulant of the worldwide, i.e. in coffee. Therefore performed research regarding the presence this micotoxin, by technique high performance liquid chromatography in reverse system phase (HPLC-RP) in coffees distributed in Poland. The
research submitted eleven coffees that bought in Tesco hypermarket in Olsztyn. Material consisted of natural coffee (n = 7) and instant coffee (n = 4).
As a result of the conducted analyses indicated that coffees were to a large extent contaminated by ochratoxin A. Alike instant coffee, as natural coffee characterized by different level analysis micotoxin. The highest concentration was determined in the sample first (22 μg/kg), while the lowest in the Lavazza coffee (7 μg/kg). The ground coffee is characterized by significantly higher concentrations of ochratoxin A than the soluble coffee. It was found that the degree of processing of coffee probably affects the level of ochratoxin A in the material.
