Designing quality in the new food product development process

Summary

Numerous studies have shown that ensuring high quality and providing unique benefits to consumers are the key elements to the market success of a food product. Therefore, the quality optimization which takes into account consumer needs and expectations in the development process is an issue of high importance.  The aim of the study was to investigate the possibility of selecting the elements of the new food product development process that can be used to enhance product quality and verify their influence on product’s market success. To achieve this objective, new product development models and consumer research techniques along with new product success factors were analyzed. Despite the fact that it has been confirmed that the use of tools resulting in the quality optimization contributes to the product success, it is difficult to clearly indicate which methods are best to be applied.
