Innovative packaging improving food quality and extending its shelf life

Summary

The preliminary function of food packaging is the protection against external factors as well as ensuring the required product quality and consumer safety. Despite the development of new packaging technologies, conventional packaging fulfils this task in a passive way. Novel active packaging enables not just passive protection of packaged products, as well as an active influence improving their quality and extending shelf life. Innovative intelligent packaging enables on-going monitoring of the condition of packed food as well as evaluation of its storage and/or distribution conditions. These packaging allow to determine the real state of food products, which is a much better indicator of their quality and safety than the fixed date of their consumption.  The article is a review of innovative packaging materials and other solutions used in active, intelligent and smart packaging for food. Food manufacturers reveal great interest in new solutions in the field of active packaging materials, especially in relation to novel moisture absorbers, oxygen scavengers and antimicrobial substances. Consumers are increasingly paying attention to smart food packaging with the function of the function of the quick assessment of their content their content and distribution conditions. In addition to market examples of innovative packaging, the article also presents interesting solutions that are still at the development stage and the author's work on materials with antimicrobial properties and on freshness indicators of packed food products.
